Ingredients
- 2 c. toasted quinoa flour
- 1 c. sorghum flour
- 1 c. tapioca starch
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. sea salt
- ½ tsp. xantham gum
- 2 c. almond milk
- 2 tsp. apple cider vinegar
- 3 large eggs separated
- 1 tbsp. maple syrup
- 1 tbsp. olive oil
Instructions
- Begin by heating your oven to 350°F and greasing an 8×4 loaf pan using your preferred method. Then beat the egg whites until stiff peaks form, about a minute or two, and set aside. In a large mixing bowl, whisk the dry ingredients together until combined. Then add in the milk, vinegar, egg yolks, syrup, and oil and mix until the batter is smooth. Next, fold in the egg whites until combined. Pour the batter into the loaf pan and bake for 55-60 minutes or until golden brown and done in the middle. When the bread is done, remove from the oven and allow to cool completely before slicing.
