Pandemic Recipe: Breakfast

Homemade Pancakes

Going to the grocery store can be anxiety inducing due to restrictions, lines, and shortages. Stay home and try out these perfect pantry pandemic recipes! These pancakes are amazing.

Don’t overlook homemade pancakes! They use basic ingredients and are super versatile. Why not surprise your kids and have breakfast for dinner? Grab your griddle and let’s go!

Basic Pancakes

Using basics this recipe creates fluffy, perfect pancakes!

Ingredients
  

  • 1 c. all-purpose flour
  • 2 tbsp. sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 c. milk
  • 2 tbsp. butter melted
  • 1 large egg
  • 1 tbsp. vegetable oil
  • Various toppings like butter, syrup, jam, whipped cream, etc.

Instructions
 

  • Begin by heating your oven to 200°F and prepping a baking sheet by lining it with parchment paper. This will serve to keep the pancakes warm while you cook.
  • Next, whisk all the dry ingredients together in a small bowl and set them aside. Then mix the milk, butter, and egg until combined. Mix the dry ingredients into the wet ingredients until just combined. Lumps are okay!
  • Heat a skillet or griddle to medium-high heat and grease with oil-moistened paper towel. Then spoon a few tablespoons of batter onto the skillet and allow to cook until bubbles form and start to pop. That means it's time to flip! Flip and cook an additional 1-2 minutes before transferring to the parchment lined baking sheet and covering loosely with tin-foil. Place in the oven so that they stay warm while you cook remaining pancakes.
