Ingredients
- 1 c. all-purpose flour
- 2 tbsp. sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 c. milk
- 2 tbsp. butter melted
- 1 large egg
- 1 tbsp. vegetable oil
- Various toppings like butter, syrup, jam, whipped cream, etc.
Instructions
- Begin by heating your oven to 200°F and prepping a baking sheet by lining it with parchment paper. This will serve to keep the pancakes warm while you cook.
- Next, whisk all the dry ingredients together in a small bowl and set them aside. Then mix the milk, butter, and egg until combined. Mix the dry ingredients into the wet ingredients until just combined. Lumps are okay!
- Heat a skillet or griddle to medium-high heat and grease with oil-moistened paper towel. Then spoon a few tablespoons of batter onto the skillet and allow to cook until bubbles form and start to pop. That means it's time to flip! Flip and cook an additional 1-2 minutes before transferring to the parchment lined baking sheet and covering loosely with tin-foil. Place in the oven so that they stay warm while you cook remaining pancakes.
