Strawberry Salsa: Sweet And Sassy

July 13, 2019 by Jillian Parkinson Leave a Comment

It’s the season of strawberries and I couldn’t be happier! From freezer jam to ice cream, strawberries are a staple of summer in our house. When it’s hot outside and we are looking for some cool refreshment, strawberry salsa is a family favorite. I love pairing it with salty tortilla chips and with cinnamon-sugar tortilla chips, depending on what else we are consuming at the time. Strawberry salsa is super versatile, you can have it more salty and savory or more sweet and full, which makes it great for parties!

All you need to get started with these recipes is something to help you chop the strawberries. You can absolutely do this by hand, or you can invest in one of these to save you some time. In addition to the veggie chopper, it’s important to have the right serving dish. Something like this or like this would work awesome! Now that you’ve got your basics, it’s time for the finding the right recipe.

Recipe 01: Classic Strawberry Salsa

Ingredients:

  • Juice and zest from 1 medium lime
  • 1 1/2 tsp. honey
  • pinch of salt
  • 1 pint hulled and diced strawberries
  • 1 chopped and seeded jalapeño
  • 1/2 chopped small red onion
  • 1/2 c. chopped cilantro
  • pepper to taste

Process:

Begin by mixing the lime juice, zest, honey and salt with a whisk until well combined. Next, stir in the strawberries, jalapeño, onion, and cilantro and mix well. Then season with pepper if desired. At this point, you can adjust seasonings if you want by adding more lime, honey or salt. Last, to serve I’d suggest letting it marinate in the fridge for about thirty minutes so that everything has the ability to mix together.

Recipe 02:  Baked Cinnamon Sugar Tortilla Chips

If you’re really in the mood for something sweet to go with your strawberry salsa, this is it!

Ingredients:

  • 1/2 c. butter
  • 8-10 in. flour tortillas
  • 1/2 c. granulated sugar
  • 2 Tbsp. ground cinnamon

Process:

Start by heating your oven to 400F and lining two baking sheets with tin foil and topping with cooling racks. Then melt your butter in a microwave safe bowl until it’s completely liquid. Next, stack the tortillas into a pile and cut them into 12 wedges. After the tortillas are cut, put them into a baggie with the butter and shake until the tortillas are equally coated in butter.

Next, in a small bowl, mix the cinnamon and the sugar together until combined. Then put the cinnamon sugar into the baggie with the buttered tortillas and shake until well coated. Last, place the finished tortillas on the racks and bake for 8-10 minutes or until they are golden brown. Remove from the oven and allow to cool so that they will crisp up. Serve and enjoy!

Recipe 03: Strawberry Mango Salsa

If you want a well-rounded salsa, this is it. It’s sweet and flavorful with just the right amount of heat.

Ingredients:

  • 3/4 c. diced strawberries
  • 3/4 c. diced mango
  • 2 Tbsp. diced red onion
  • 1 seeded and minced jalapeño
  • 2 Tbsp. chopped cilantro
  • 2 tsp. honey
  • 1 lime juiced

Process:

Begin by whisking the lime juice and honey together until combined. Then mix the strawberries, mango, jalapeño, onion, and cilantro together and fold in the lime-honey mixture. Serve and enjoy!

So the next time you’re at the grocery store and they have cartons of fresh, ripe strawberries, grab one or two (or five) and try making some strawberry salsa! You won’t be disappointed.
