Ingredients
- 1 c oats plus 2 tbsp., divided
- 1 ⅓ c. white whole wheat flour
- 1 c. all-purpose flour
- 2 ¼ tsp. baking powder
- ¼ tsp. baking soda
- 1 ¼ tsp. salt
- 1 c. plain yogurt
- ¼ c. canola or vegetable oil
- 1 large egg
- ¼ c. honey plus 1 tbsp., divided
- ¾ c. milk
Instructions
- Start by heating your oven to 375°F and greasing a 9×5 loaf pan using your preferred method. When the loaf pan is greased, sprinkle a tablespoon of oats into the pan and tap until the oats have covered the sides and bottom.
- Next, mix the flours, baking powder, baking soda, and salt together in a medium-sized bowl until combined. Then in a separate bowl, whisk the yogurt, egg, oil, oats, and ¼ c. honey together until completely combined. After the yogurt mixture is combined, add in the milk. Then carefully mix the yogurt mixture into the flour mixture until it's just combined. If you mix too much, the bread will be really tough.
- Pour the batter into the pan and make sure it's spread to each edge. Bake for 30-45 minutes or until the top is golden brown and a toothpick inserted in the middle comes out clean. When the bread is done, remove from the oven and gently remove from the loaf pan. While the bread is still warm, brush the top with a tablespoon of honey and sprinkle the remaining tablespoon of oats over the top. Serve and enjoy!
