Okay, so you’ve got digestion issues. Cow’s milk is not your friend (or perhaps your vegan) and you can’t do almond milk, or your don’t like the taste. What’s a girl to do? Make oat milk of course! This is a super tasty way to get some good nutrients without having to deal with the animal proteins. Plus, it’s easy and cost-effective. So, here’s how you get started!
- 1 c. rolled oats (gluten free)
- squeeze of lemon juice
- 3-4 c. water
- 1 pinch salt
- If making sweet milk add: 1/2 tsp. vanilla extract, 1 Tbsp. preferred sweetener like maple syrup, agave, etc.
Step 1: Take 1 c. rolled oats (gluten free) and at least 2 c. water and a squeeze of lemon juice and allow the oats to soak for at least 30 minutes, if not overnight. This allows the oats to let go of those phylates and the nutrients to remain. The lemon juice will help keep the mixture from getting gummy.
Step 2: Rinse your oats in a strainer (like this one) before tossing them into your high speed blender (like this one). Blend for about a minute with 3 c. of water until the mixture seems well combined. If you over mix it’s going to get slimy. Take a second to taste the mixture. If you want it creamier, leave. If you want it thinner, add a little more water. If you want it sweeter, add a little more syrup.
Step 3: Pour the oat mixture over a bowl that has been covered with cheesecloth (here). The larger the holes, the more oat elements it’s going to let through. So if you’re looking for something really clean, double the cheesecloth.
Step 4: Transfer the milk mixture to a glass carafe and refrigerate for up to 5 days. Then use those left over oats in a tasty recipe and make some cookies!
