Pegan Recipe 01: Cucumber Avocado Watermelon Salad
This salad is a great mix of sweet and salty, creamy and crunchy. It’s perfect for a summer day and great for a pegan lunch! Grab yourself a melon baller here so that you don’t have to just slice your avocado.
Cucumber Avocado Salad
- 2 ½ c. cubed watermelon
- 1 small English cucumber thinly sliced
- 1 avocado scooped into small balls
- 3 tbsp. olive oil
- 2 tbsp. chopped basil
- 1 lime juiced
- salt and pepper to taste
- Start by cutting, chopping, and preparing your veggies. Then toss them into a bowl and give them a little mix. Next, squeeze the lime over the top and give it a thorough stir before adding in the olive oil, basil, salt, and pepper. Give one more gentle toss and enjoy!
