Pegan Recipe 01: Cucumber Avocado Watermelon Salad

This salad is a great mix of sweet and salty, creamy and crunchy. It’s perfect for a summer day and great for a pegan lunch! Grab yourself a melon baller here so that you don’t have to just slice your avocado. 

Cucumber Avocado Salad

Fresh and full of flavor, this salad is a summertime staple.

Ingredients
  

  • 2 ½ c. cubed watermelon
  • 1 small English cucumber thinly sliced
  • 1 avocado scooped into small balls
  • 3 tbsp. olive oil
  • 2 tbsp. chopped basil
  • 1 lime juiced
  • salt and pepper to taste

Instructions
 

  • Start by cutting, chopping, and preparing your veggies. Then toss them into a bowl and give them a little mix. Next, squeeze the lime over the top and give it a thorough stir before adding in the olive oil, basil, salt, and pepper. Give one more gentle toss and enjoy!
