Healthy Shrimp Taco Recipe

Shrimp Tacos are a perfect way to say hello to sunshine and warm weather. If you're unsure about how to make shrimp tacos, here are some great recipes!

If you’re eating low carb or Keto, then shrimp is a great alternative to eating chicken every night. These shrimp tacos are full of flavor without being too spicy. The lime adds sharpness to the dish and the mayo is the perfect topping! Make sure to keep an eye on how long you’re marinating the shrimp. If you let it sit in the acid of the lime juice too long, it’s going to make the shrimp take on a rubbery texture instead of being soft. Don’t forget to pick up a set of taco holders so you can build your tacos without making a mess!

Healthy Shrimp Tacos

These shrimp tacos will become a family favorite in no time flat!

Ingredients
  

  • 3 limes juiced
  • 2 tbsp. cilantro freshly chopped
  • 2 cloves garlic minced
  • ½ tsp. cumin
  • 1 tbsp. olive oil
  • 1 lime zest
  • salt to taste
  • 1 lb. shrimp peeled and deveined
  • 8 tortillas warmed

Cabbage Slaw

  • 1 c. green cabbage shredded
  • ¼ c. cilantro
  • ¼ red onion sliced thinly
  • ½ avocado sliced thinly
  • 1 lime juiced
  • 1 tbsp. olive oil
  • salt to taste

Garlic-Lime Mayo

  • ⅓ c. mayo
  • 2 tbsp. hot sauce
  • 1 lime zest
  • ½ tsp. garlic powder
  • salt to taste

Instructions
 

  • Start by whisking the lime juice, cilantro, garlic, cumin, olive oil, zest and a little salt together until combined. Then add in the shrimp and give a good toss before covering and allowing to marinate in the fridge for 20 minutes. Don't marinate any longer than 20 minutes or you will risk having rubbery shrimp.
  • While the shrimp is marinating, make the slaw by combining all the ingredients together and giving a good mix. Season with salt and set aside.
  • You don't have to make the garlic-lime mayo, but it pairs so nicely with the shrimp. Simply whisk all the ingredients together in a bowl and season with salt.
  • When the shrimp is done marinating, heat your grill to medium heat. Grill the shrimp about 3 minutes per side, or until they are pink and opaque.
  • Last, make your tacos by layering the slaw, shrimp, and a little mayo. If you want, garnish with additional cilantro, then serve and enjoy!
