We love driving up the canyon and cooking them over a campfire. Nothing tastes better than fresh air, delicious food, and a quick clean up. Just because those balmy summer nights are over doesn’t mean you have to put away the tin foil dinners for the year! If fall tends to be a little too chilly to hang out in the mountains, then you can always cook tin foil dinners in your own kitchen. What’s great about a tin foil dinner is that they don’t require a lot of prep and they definitely don’t require a lot of clean up, both of which are amazing in my book!

Recipe 01: Lemony Butter Salmon

Ingredients

  • 2 zucchinis thinly sliced
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 2 lemons thinly sliced
  • 6 salmon fillets
  • 4 Tbsp. butter divided
  • 4 sprigs thyme
  • white wine

Instructions

  • Start by heating your grill to medium-high and prepping 4 sections of tinfoil approximately 10" long.
  • Begin compiling your tin foil dinners by laying a single layer of zucchini on each piece of tin foil and scattering a little garlic on top. Then season with salt and pepper before placing a few slices of lemon. Next, place a salmon fillet and top with more salt and pepper. Before wrapping the tin foil dinners, put a tablespoon of butter on each salmon fillet with a sprig of thyme and a splash of white wine.
  • To finish, fold the tin foil up making sure to seal the edges. Then place packets on the grill and cook for about 10-12 minutes so that the salmon is cooked through and the zucchini is tender. Serve and enjoy!

  • 1 LB Baby Red Potatoes quartered
  • 2 small yellow squash coined
  • 1 ½ c. green beans trimmed
  • 4 chicken sausages sliced
  • 2 Tbsp. ground thyme
  • 1 tsp. sea salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 Tbsp ghee separated

Instructions

  • Begin by heating your grill to high and cutting 8 pieces of tin foil approximately 8" long.
  • Next, mix the potatoes, green beans, onion, and chicken in a bowl before adding in the spices and stirring until combined. Then divide the mixture onto the prepared tin foil sheets. Before folding the tinfoil, add 1/2 Tbsp. ghee to each packet. If desired, wrap the packet in a second piece of tin foil.
  • When the dinners are secured, place them on the grill and allow to cook for 30-35 minutes or until the vegetables are tender and the chicken is cooked through. Serve and enjoy!

  • Begin by heating the oven to 375° F and cutting four pieces of tin foil approximately 12" long.
  • After you have the tin foil ready, add a piece of chicken to the middle and season with salt and pepper. Before wrapping each packet, top the chicken with pesto, tomatoes, and mozzarella, then fold the edges together and seal each package.
  • Bake the tin foil packets by placing them on a baking sheet and placing them in the oven for about 25-30 minutes or until the internal temp. reaches 165°F. Remove from the oven, garnish with basil, and serve!
