Pesto Caprese Chicken Tin Foil Dinner

Not only is the prep almost non-existent, but the flavor in this dish is out of the world!

Ingredients
  

  • 4 chicken breasts boneless, skinless
  • salt and pepper to taste
  • 1 c. pesto
  • 2 Roma tomatoes sliced
  • 4 oz. fresh mozzarella cheese cut into four slices
  • ¼ c. basil leaves chiffonade

Instructions
 

  • Begin by heating the oven to 375° F and cutting four pieces of tin foil approximately 12" long.
  • After you have the tin foil ready, add a piece of chicken to the middle and season with salt and pepper. Before wrapping each packet, top the chicken with pesto, tomatoes, and mozzarella, then fold the edges together and seal each package.
  • Bake the tin foil packets by placing them on a baking sheet and placing them in the oven for about 25-30 minutes or until the internal temp. reaches 165°F. Remove from the oven, garnish with basil, and serve!
