After all, it’s the season of apples, maple, caramel, and cinnamon, among many other things!

Welcome the upcoming fall season with two of the most delightful fall desserts where every bite will capture the season’s true essence and feel.

Caramel Apple Pie

This is a true fall classic that everyone should try at home this fall season.

It’s a beautiful combination of caramel-coated apples, a flaky pie crust, golden salted caramel sauce, and butter streusel.

Ingredients

For the Pie Crust

  • 2 cups – plain flour
  • 1/4 cup – custard powder
  • 1 cup – self-raising flour
  • 2 tbsp. – icing sugar
  • 1/4 cup – corn flour
  • 1 tbsp. – demerara sugar
  • 200g – cold unsalted butter, chopped
  • 2 – egg yolks
  • 1 extra egg
  • 2/3 cup – cold water

For the Caramel Apple Filling

  • 3 tbsps. – fresh lemon juice
  • 6 – Granny Smith (cut into ¼ inch slices)
  • ½ tsp – salt
  • ¼ cup – dark brown sugar
  • ¾ tsp – ground nutmeg
  • 2 cups – salted caramel sauce
  • 2 ½ tbsp. – cornstarch
  • 1 ½ tsp – ground cinnamon
  • ¼ tsp – ground cloves

For the Salted Caramel Sauce

  • 3 cups – heavy cream
  • 1 tsp – pure vanilla extract
  • ¾ cup – corn syrup
  • 2 cups – granulated sugar
  • 2 tsp – kosher salt

For the Crumb Topping

  • 1 cup – all-purpose flour
  • ¼ cup – whole wheat flour
  • Quarter cup – granulated sugar
  • ¼ cup – dark brown sugar
  • ¾ tsp – salt
  • ½ tsp – ground cinnamon
  • ¼ tsp – ground nutmeg
  • 8 tbsp. – butter (melted)

Directions

  1. In a food processor, add the flours, custard powder, salt, and icing sugar. Combine together and then add the butter. Whiz until it forms fine crumbs. Add the egg yolks, cold water, and mix until it forms a nice smooth texture. Roll it into a ball, cover in plastic wrap, and chill for a few hours.
  2. In a pan, add the fresh lemon juice along with the apple slices.
  3. Then, take a bowl and add the cornstarch, brown sugar, cloves, nutmeg, cinnamon, and salt. Mix and combine. Coat the apples in this mixture with a spatula.
  4. Meanwhile, prepare the salted caramel sauce by heating cream in a saucepan till it starts bubbling. Turn down the heat and allow it to warm down.
  5. In another saucepan, add the sugar, golden syrup, and salt. Keep stirring until the sugar melts and the syrup achieves a light amber color.
  6. Turn the heat up, slowly pour in the warm cream, and stir constantly. Keep stirring until it forms a nice, thick consistency. Remove from heat and add the vanilla extract.
  7. Once the salted caramel sauce has cooled, add half of it to the apple mixture. Switch the heat to medium and cook it until the mixture starts boiling.
  8. Take the pie crust out of the refrigerator and roll it out on a flat surface. Line a pie plate with the dough.
  9. Pour in the apple filling and make sure to pile the mixture because apples tend to shrink in the oven.
  10.  Bake the pie uncovered on a cookie sheet lined with aluminum foil.
  11. While it’s in the oven, prepare the crumb topping by adding all the ingredients in a bowl except the butter. Combine it well.
  12. Then, pour in melted butter, and mix together. The consistency should be similar to that of wet sand.
  13. Take the pie out of the oven, add the crumb topping, and bake it for another 30 minutes.
  14. Remove the pie from the oven once the bottom is fully baked and the filling starts to bubble.
  15. Allow it to cool for 2 hours or so on a wire rack and then drizzle the remaining caramel sauce on top.

Your rich, delicious caramel apple pie is ready to eat and it’s best eaten warm, at room temperature!
