You know what I love about muffin tins? The versatility of being able to make bite size or personal sized food. You can create easy breakfasts, lunches, or dinners all in a muffin tin and not have to worry about cutting things into equal portions (cue the kid’s tantrum over who has the “bigger” piece). Can I say #muffintinmeals? Amazon has some awesome deals on muffin tins HERE and HERE. So, here we have a round-up of 12+ delicious and easy muffin-tin recipes!
#1 The Classic Blueberry Muffin: This is a classic that never goes out of style. Whether you choose to use fresh blueberries or frozen, this is a guaranteed hit for breakfast or brunch of any kind!
#2 French Toast Muffins: Who doesn’t love French Toast? My biggest beef with this classic dish is having to dip the individual pieces of bread into eggs and then cook them. It takes forever. Especially when there’s hungry children (and husbands!) to feed. So here we have a quick and easy way to make your french toast and eat it too.
#3 Cauliflower Breakfast Muffins: Need something that is going to be low carb/paleo? These muffins were a hit and a super sneaky way to hide some veggies from my kids!
#4 Pumpkin Butterscotch Muffins: Pumpkin is legendary around our house. As soon as the weather starts to turn in September, my husband and kiddos start clamoring for all things pumpkin. These are so yummy. The perfect blend of spicy pumpkin with salty sweet butterscotch!
#5 Chocolate Lover’s Chocolate Chip Muffins: Okay, so chocolate for breakfast is pretty much every kid (and mom)’s dreams, right? These were a little high maintenance with the buttermilk because I never have it on hand, but the espresso/coffee addition put this over the top!
#6 Peaches and Cream Muffins: Okay, my dad has a serious obsession with all things peach. It has to do with this peach tree in his backyard that he purchased on year on a whim and spent the subsequent years trying to entice it to grow fruit. It eventually did. To the point that we had freezer jam coming out of our ears. But I digress, these were phenomenal, and a great way to use those left over peaches!
#7 Bacon and Egg Breakfast Muffins: Remember how I have chickens? Well along with all those happy little clucks, I constantly have eggs I have to use up in new and creative ways. This was perfect. My husband loved them and it was a great way to sneak some protein in to my kids breakfasts!
#8 Pumpkin Cheesecake Muffins: While these are a little labor intensive, they are absolutely worth it. Think of these as the perfect shower-brunch-treat. Not only are they tasty, they are beautiful and elegant.
#9: New York Style Coffee-cake Muffins: Crumb. Topping. Need I say more? I don’t think so.
#10 Banana Nut Muffins: My kids hate nuts. Which is okay-it means more for me! I love the subtle sweet of the banana mixed with the soft crunch from the walnuts. And the fact that I got to enjoy these on my own? Priceless.
#11 Carrot and Apple Oat Muffins: Who says you can’t have your carrots and eat them too? This is a fantastic way to sneak in some extra nutrients without your kids noticing. Wait, are there carrots in here, Mom? Nope. Definitely not.
#12 Healthy Zucchini Muffins: I plant a garden every spring and the one veggie I can’t find enough things to do with is Zucchini. Seriously, I put it in almost everything. And it’s ok! Because it’s such a versatile veggie. These are healthy, tasty, and perfect just out of the oven. Haven’t grown your own zucchini before? You should! They are a really versatile veggie and super easy to grow.
We’re going to round out this list with lucky #13:
Creme Brûlée Muffins: So this is pretty much my favorite dessert. Ever. Putting it into a muffin that I can rationalize eating for breakfast? Almost illegal. And delicious.
I hope that you enjoyed this round-up of 12+ things to make in your muffin tin! Hopefully it inspires some healthy (and tasty) breakfast and brunch options!
