#2 French Toast Muffins: Who doesn’t love French Toast? My biggest beef with this classic dish is having to dip the individual pieces of bread into eggs and then cook them. It takes forever. Especially when there’s hungry children (and husbands!) to feed. So here we have a quick and easy way to make your french toast and eat it too.
#3 Cauliflower Breakfast Muffins: Need something that is going to be low carb/paleo? These muffins were a hit and a super sneaky way to hide some veggies from my kids!
#4 Pumpkin Butterscotch Muffins: Pumpkin is legendary around our house. As soon as the weather starts to turn in September, my husband and kiddos start clamoring for all things pumpkin. These are so yummy. The perfect blend of spicy pumpkin with salty sweet butterscotch!
#5 Chocolate Lover’s Chocolate Chip Muffins: Okay, so chocolate for breakfast is pretty much every kid (and mom)’s dreams, right? These were a little high maintenance with the buttermilk because I never have it on hand, but the espresso/coffee addition put this over the top!

#8 Pumpkin Cheesecake Muffins: While these are a little labor intensive, they are absolutely worth it. Think of these as the perfect shower-brunch-treat. Not only are they tasty, they are beautiful and elegant.
#9: New York Style Coffee-cake Muffins: Crumb. Topping. Need I say more? I don’t think so.
#10 Banana Nut Muffins: My kids hate nuts. Which is okay-it means more for me! I love the subtle sweet of the banana mixed with the soft crunch from the walnuts. And the fact that I got to enjoy these on my own? Priceless.
#11 Carrot and Apple Oat Muffins: Who says you can’t have your carrots and eat them too? This is a fantastic way to sneak in some extra nutrients without your kids noticing. Wait, are there carrots in here, Mom? Nope. Definitely not.
