Sweet Bibingka

Creamy and sweet, this recipe is a great dessert for a crowd!

Ingredients
  

  • ½ c. butter softened
  • 1 lb. sweet rice flour
  • 2 ½ c. sugar
  • 1 tsp. baking powder
  • 3 c. milk fresh or evaporated
  • 5 large eggs beaten
  • 1 tsp. vanilla extract
  • 1 c. coconut flakes

Method
 

  1. Start by creaming the butter and eggs together in a mixing bowl. Next, add in the remaining ingredients one at a time and continue to mix until combined. Then pour the batter into a greased 9x13 pan and bake for 1 hour at 350°F. The dish is done when a toothpick inserted into the middle comes out clean. Remove from the oven and allow to cool before cutting into squares. Garnish with additional coconut if desired. Serve and enjoy!
