Grandma's Rice Pudding

Ingredients
  

  • 6 c. whole milk divided
  • ½ c. sugar
  • ½ tsp. salt
  • ½ c. rice
  • 2 tsp. vanilla extract
  • cinnamon or jam optional

Method
 

  1. In a large saucepan, combine the sugar, salt, and 5 ½ cups of milk. Bring the milk to a boil over medium-high heat, whisking occasionally. When the mixture comes to a boil, stir in the rice and reduce the heat to low, making sure to keep the mixture at a simmer.
  2. Cook the rice for 50-60 minutes, stirring occasionally. The mixture will thicken to about the consistency of yogurt. When it's the right consistency, remove from heat and stir in the vanilla. Allow the mixture to cool, then serve or place in the fridge. If you refrigerate the mixture, add the last half cup of milk before serving.
