Begin by heating your oven to 500°F and lining two baking sheets with parchment paper. Then sprinkle each sheet with cornmeal and set aside.
Remove dough and give a gentle knead before cutting into four equal pieces and stretching out into a 6-inch disk. Then place the pizzas on the pans.
While the dough is resting, heat a tablespoon of olive oil over medium-high heat. When the oil is hot, add the spinach and cook until it starts to wilt. Then remove from heat and mix the spinach with the remaining ingredients (with the exception of the eggs).
Next, spoon the spinach mixture over the top of pizzas, making sure to leave a slight border. Then bake for about 5 minutes before removing from the oven and breaking an egg into the center of each pizza. Return the pizzas to the oven and bake until the whites of the eggs are set, which should take about 6-10 minutes. Remove from the oven and drizzle with olive oil and top with additional Parmesan cheese if desired. Serve with green peppers, sliced avocado, or bacon, and enjoy!
