Alright people, my favorite holiday of the year is fast approaching. I’m not talking about Christmas, I’m talking about the Fourth of July and Fourth of July popsicles.
I love the Fourth. Our family pulls out all the stops: huge barbecue complete with brisket, salads, sun, water, and we finish it all off with a fireworks show that the whole neighborhood shows up to! It’s pretty epic. There is something completely perfect about a warm July evening with sparklers, delicious food, and kids running around in swimsuits on the lawn.
I try every year to up the ante just a little bit by incorporating something new. One year we made a gigantic water blob, the next we had a “dessert off” to see who could make the best dessert.

We try to divvy out who brings what so that it doesn’t end up all falling on my mom. This year I’m bringing the popsicles. I’m not talking about store bought popsicles. I’m talking homemade, Fourth of July themed popsicles to rock your socks off. Here’s what you need:
- Popsicle Molds: You can go fancy like these or plain and simple using a paper cup and popsicle sticks. Either way, you’ve got to have a plan for where you’re putting the deliciousness.
- Flavors! Since we are doings this Red, White, and Blue style, I’m sticking with some classics: Kool-Aid, Vanilla Yogurt, white chocolate pudding, and fresh fruit.
Patriotic Fourth of July Popsicles
Popsicle #1: Red, White, and Blue Patriotic Kool-Aid pops
Ingredients:
- 1 packet Cherry Kool-Aid plus ingredients to make the drink
- 1 packet Blue Raspberry Kool-Aid plus ingredients to make the drink
- 2 cups vanilla yogurt
- 1 cup milk
Process: Start off by making blue Kool-Aid according to the directions. Then fill each mold approximately 1/3 full with the yummy blue stuff. Let it freeze completely! Next, take your vanilla yogurt and milk and mix until it’s smooth. Fill molds another 1/3 (or less if you’d like to play with the color band ratio a little bit). Freeze (again, I know it’s a lot of freezing). Mix up the Cherry Kool-Aid, top off your popsicles, and freeze one last time. Then you’ve got some delicious and patriotic popsicles!
Popsicle #2: Red and Blue Berry Creamsicles
Ingredients:
- 1 package instant white chocolate pudding
- 2 cups milk
- 1 cup thawed whipped topping
- 1 cup raspberries
- 1 cup blueberries
Process: Mix the pudding and milk together until smooth, then fold in the whipped topping. Take your raspberries and put them in the bottom of your mold. You want to leave some space along the middle, but feel free to smoosh them up to the sides, you want them to show through the cream. Next, fill your cup or mold about 2/3 full with the pudding mixture and pop in the freezer. When the mixture is almost set, but not necessarily frozen, top the mold with a ring of blueberries and then fill to the brim with remaining mixture. Or, you can just throw the raspberries, blueberries, and pudding together and let the whole thing become a delicious mix of color and flavor. You rock your popsicles however you please!
And there you have! I’ll trying out both versions to see which is more popular…my bet is the kids will go for the Kool-aid pops while the adults opt for the creamsicles. I’ll keep you posted!
