This is it-the big day is just around the corner! GAME DAY! I know many people are extra excited this year, which means more parties than before. If you’re playing host for this years big game day, then I’ve got the recipes you need to have a successful party! One key to a great game day recipe is portability! Food needs to be portable, snackable, and filling.
Recipe #1: The BEST Meatballs
Ingredients:
- 1 1/2 lb. ground beef
- 3/4 c. quick oats
- 1 c. milk
- 3 Tbsp. minced onion
- 1 1/2 tsp. salt
- dash of ground pepper
- 4 Tbsp. canola oil
- 1/2 c. flour
- Sauce: 1 c. ketchup, 4-6 Tbsp minced onion, 3 Tbsp. distilled white vinegar, 2 Tbsp. sugar, 2 Tbsp. Worcestershire sauce, dash of hot sauce.
Process: In a bowl combine the ground beef and oats. Mix with your hands slightly. Add in the milk, onion, salt, and pepper before mixing again until just combined. Don’t over mix the beef or it will get tough. Roll the mixture into tablespoon sized balls and refrigerate them for at least 30 minutes. When they are nice and firm, preheat your oven to 350F and heat up the canola oil in a large skillet over medium heat. Roll the meatballs in the flour before browning them in small batches until they are golden brown. Once they are golden brown, transfer them to a baking dish. Before baking, make your yummy sauce by mixing all of your ingredients together. Add as much or as little hot sauce as you’d like. Pour the sauce over the meatballs, then bake until bubbly and hot, which should take about 45 minutes. Perfect for game day. Serve and enjoy!
Recipe #2: Fresh Guacamole Dip
Ingredients:
- 1/4 minced red onion
- 2 cloves garlic
- 1/2 tsp. salt
- 2 ripe Hass avocados
- Juice of 1 lime
- 2-3 Tbsp. rough chopped cilantro
- 1 diced plum tomato
- 1/4-1/2 jalapeno, minced
Process: Start by soaking the onion in cold water for 15 minutes. While it’s soaking, get your garlic ready by smashing it on a salt sprinkled cutting board until you have a good paste. Drain the water from the onion and add the garlic paste. Cut the avocados in half, saving the seeds. Scoop the flesh out into the bowl with the onion and garlic. Add the lime juice, cilantro, tomato, and jalapeno to taste. Using a large fork, mix until just combined and chunky. Plop the seeds back into the guacamole (this will help keep it from browning), then sprinkle with a little more salt and serve!
Recipe #3: Slow Cooker Spinach Artichoke Dip
Ingredients:
- 2 cans artichoke hearts, drained and shopped
- 1 package frozen spinach, thawed and dried
- 8 oz. sour cream
- 1 small diced onion
- 2 crushed cloves of garlic
- 3/4 c. grated Parmesan cheese
- 3/4 c. milk
- 1/2 c. crumbled feta
- 1/3 c. mayo
- 1 Tbsp. red wine vinegar
- 1/4 tsp. pepper
- 8 oz. cream cheese, cubed
Process: Place all ingredients but the cream cheese in the slow cooker and mix until well combined. Top with the cubes of cream cheese. Cover and cook on low for 2 hours. After 2 hours, uncover and stir until the cream cheese is thoroughly mixed in. Cover and cook on high for an additional 15 minutes. Serve hot! This makes game day so much better.
Recipe #4: Ham & Swiss Sliders
Ingredients:
- 1/4 c. mustard
- 1 Tbsp. honey
- 1/4 c. melted butter
- 1 Tbsp. poppy seeds
- 1/4 c. mayo
- 12 sliders buns
- 12 slices deli ham
- 12 slices Swiss cheese
Process: Start by heating your oven to 350F and lining a baking sheet with parchment paper. In a small bowl, whisk the mustard and honey until well combined. Next, make your poppy dressing by combining butter, poppy seeds, and 1 Tbsp of the honey-mustard mix. whisk well to mix. Cut your sliders buns in half horizontally and put the bottom half on the baking sheet. Using a spatula, spread the mayo in an even layer on the bottom of the buns, then top with an even layer of ham slices and cheese slices. Spread the honey-mustard mix on the bottom of the top buns before placing over the ham and cheese. Use a pastry brush to brush the poppyseed dressing over the top of the buns until all buns are thoroughly coated. Toss that baby in the oven for 10-12 minutes so that the cheese is nice and melty. Slice and serve!
Recipe #5: S’mores Brownies
Ingredients
- 6 graham crackers
- 1 box brownie mix, plus ingredients on box
- 1 c. chopped Hershey’s bars
- 1 bag mini marshmallows
Process: Start by heating your oven to 350F. Spray your 9×9 baking pan with cooking spray before layering the bottom with gram crackers. Make your brownie mix according to the instructions, then fold in the chopped Hershey’s bar. Pour the batter over the graham crackers and back until almost done-about 35 minutes. Remove the brownies from the oven for a minute to top with the marshmallows and then bake another 20-25 minutes until the brownies are done and the marshmallows are golden brown. Before pulling them out of the oven, broil for 1-2 minutes. Allow to cool for about 10 minutes before slicing and serving!
