It’s five o’clock and you’ve just gotten home from a long day at work and running kids from place to place. You walk into the kitchen and realize you forgot to put anything in the crockpot. The kids are hangry, the husband is cranky, and you’re at your wits end. Opening up the cupboards you realize you’re out of macaroni and cheese, and your freezer is empty of nuggets. Panic sets in. What do you do? Well, here are ten easy, healthy, quick recipes that can help save the day!
Grilled Cheese. This is seriously a family favorite and definitely a go-to when I’ve forgotten to start dinner earlier or when I’m just too tired to slave over the stove for an hour. Taking this to the next level is this awesome Salsa Grilled Cheese. Not only will it please the children, but it will please the adults as well.
PB & J. This is a classic. You can make it plan for the picky toddler, or you can dress it up and take it out for a night on the town like this PBJ Banana Waffle Sandwich. It’s going to dress it up with a waffle and decorate it with some yummy bananas. Winner, winner right here!
Tuna Melts. These are no longer the thing of the 70s and 80s, my friends! Dress it up like this Tuna Melt Tostada, guaranteed to please the adults in the family, as well as those picky eaters. They have a bonus for being healthy and relatively low carb.
Pancakes! These are a staple at our house. Whether you used the box stuff, or you make your own using this easy recipe, it’s a good go-to when you’ve got nothing in your fridge! Don’t have syrup? Try topping your pancakes with jam, honey, nutella, whatever you’ve got in your fridge.
Scrambled Eggs: I’ve mentioned before (and hopefully you’re not sick of it) about our plethora of eggs. It’s the one staple we are always guaranteed to have. This recipe bumps them up a notch however, and they are definitely delicious.
Waffles: Okay, I know, you’re yelling at me saying “Waffles are just fancy pancakes!” But hear me out. Waffles are similar to pancakes, but they have a light crunch that is decadent and perfect with anything sweet or savory. Add in this Double Belgian Waffle Iron and you’re in business! Pasta Carbonara: This is a super easy dish that you can eat with only a tinge of guilt for the pasta. The egg, peas, and bacon make this a pasta dish a cut above the rest.
