If you haven’t heard about smokeless indoor grills, then it’s about time you hop on the bandwagon! This isn’t your average grill. The great part about a smokeless indoor grill is that you get all the flavor of an outdoor grill with less mess, less hassle, and no outdoors. If you don’t have one already, grab one here. I don’t think you’ll regret it!
Once you’ve got your grill, it’s time to get grilling! You can definitely use the same family favorite recipes that you use on your outdoor grill. But why do the same old thing? Instead, you should try one of these recipes and really see what your grill can do! I’ve gathered a main dish, side dish or appetizer, and dessert for your grilling delight.
Smokeless Indoor Grill Ideas
Recipe 01: Chicken Souvlaki and Tzatziki Sauce
Light and fresh, this is the main dish that can’t be missed.
Ingredients:
- 3 Tbsp. fresh lemon juice
- 1 1/2 tsp. chopped fresh cilantro
- 2 tsp. olive oil
- 1/2 tsp. salt
- 4 minced garlic cloves
- 1/2 lb. skinless, boneless chicken breast cut into 1″ pieces
- 1 medium zucchini, quartered and cut into 1/2″ slices
- 1 red bell pepper, seeded and cut into pieces
- 1 green bell pepper, seeded and cut into pieces
- Tzatziki Sauce: 1/2 c. cucumber (peeled, seeded, and shredded), 1/2 c. plain low-fat yogurt, 1 Tbsp. lemon juice, 1/4 tsp. salt, 1 clove minced garlic)
Process:
Start by combining lemon juice, cilantro, olive oil, salt, and garlic in a ziploc bag. Next, add in sliced chicken and seal the bag well before shaking gently so that the chicken is thoroughly coated in the mixture. Then put the chicken into the fridge for at least 30 minutes to marinate. After chicken has had a chance to marinate well, remove from the bag and thread pieces of chicken onto skewers, alternating with zucchini and peppers.
When the skewers are assembled, heat the grill to 350F and spray with non-stick cooking spray. When the grill is to temperature, add skewers and cool for four minutes before turning and cooking 4-5 minutes more. The chicken should be cooked through. While the chicken is cooking, prepare the tzatziki sauce. Begin by combining the cucumber, yogurt, lemon juice, salt, and garlic and stir until completely combined. Allow the chicken to cool after cooking, then serve with tzatziki sauce and enjoy!
Recipe 02: Grilled Artichokes & Aioli
A great appetizer or side dish, this veggie packs a punch of flavor.
Ingredients:
- Olive oil
- 5 cloves garlic pressed or minced
- 3/4 c. mayo
- 1 1/2 tsp. balsamic vinegar
- 1 tsp. salt, divided
- 1/4 tsp. pepper
- 6 artichokes
- juice from 1 lemon
Process:
Begin by making the aioli. First, combine the garlic and lemon juice in a small bowl, making sure everything is evenly coated before adding the salt and allowing to rest for at least 10 minutes. After the mixture has been allowed to rest, place into a fine sieve (like this) and strain out as much juice as you can. Then discard the leftover garlic. To finish the aioli, mix the garlic-lemon juice into the mayonnaise until combined. Adjust the taste of aioli by adding a little more mayo to mellow it, a little more salt to sharpen, or a little squeeze of lemon to add tang.
To cook the artichokes, put about an inch of water in the bottom of a large pot (like this one) and begin to cook on high. Then prepare the artichokes by trimming the tips off of the leaves and cutting the artichokes in half. Using a sharp spoon, scoop out the fuzzy part of the heart before rubbing the whole artichoke with lemon. This keeps the artichokes from oxidizing.
Last, place the artichokes into the steaming portion of the pot and steam over medium-high for about twenty minutes or until you can pierce the heart easily with a knife. When the artichokes are done steaming, it’s time to prep the grill.
Turn the grill to 350F and brush the artichokes with olive oil and sprinkle with salt. Place the artichokes cut-side-down and grill for 5-10 minutes. There should be good grill lines on the cut side of the artichokes. Remove from the grill and serve with aioli!
Recipe 03: Grilled Pineapple Cheesecake Parfaits
Sweet, creamy, and tangy, this dessert is perfect to bring a little sunshine into any dreary day.
Ingredients:
- 1 pineapple cut into spears
- 1 sleeve graham crackers, crushed
- 1 pkg cheesecake flavor instant pudding
- 2 c. heavy whipping cream
Process:
Begin by heating the indoor grill to 350F. When the grill is at the right temperature, put the spears onto the grill and grill until nicely brown and caramelized on each side. Then, remove from the grill and cut into small bite-sized chunks. Next, mix together the pudding mix and whipping cream in a medium-sized bowl until combined. Continue to mix for about two minutes until the mixture is thick and creamy. To finish, layer graham crackers, grilled pineapple, and cheesecake filling until you reach the top. Garnish with a slice of grilled pineapple and serve!
