As the school year winds down, it seems like all of my extra-curricular activities always heat up. Between term four grading, end of year dances, yearbooks, the whole shebang, I find myself with very little time (and energy) to cook. So, how do I handle those nights when I’m too tired to slave over the stove or with no time to throw anything together? I use freezer meals! You can definitely use any old pyrex baking dish, or if you’re really in the mood to be low-key, these work fabulously.
#1 Homemade Chicken Taquitos: These are a life saver when I’m in a hurry, and they are definitely a favorite of my girls. They freeze easy, all you need is a cookie sheet (like this one) and a freezer and you’re in business. Simply roll the tortillas, place them parchment paper on top of a cookie sheet and freeze until they are frozen through. After that, all you have to do is microwave them or cook in the oven!
#2 Chicken Broccoli Rice Casserole: This is a family classic. Not only is it inexpensive, but also easy to put together. As a bonus, it freezes really well and can be frozen for quite a while. You can freeze it in ziploc bags or a cute casserole dish like this one.
#3 Freezer Ready French Toast Sticks: Every now and again my kids get sick of having cereal for breakfast, and since I’m not a super early riser, a hot breakfast isn’t going to happen on a regular basis. Enter these bad boys. You can make an entire loaf of bread worth, freeze it, and have a hot breakfast ready in 30 second or less.
#4 Freezer Breakfast Sandwiches: On the topic of breakfast, these are a great take and go breakfast! If you need some decent protein, the eggs and meat on these are a great bonus. My husband loves them! Simply heat up and you’ve got a great protein filled breakfast. You can customize them to fit whatever meats you like, and you can leave the yolk out for a slightly healthier meal.
#5 Homemade Frozen Pizza: I’ve mentioned before that my husband loves pizza. As in he could eat it for breakfast, lunch, and dinner for the rest of his life. But I hate looking at the list of ingredients on the frozen pizzas and trying to decipher them. This way, I know exactly what goes in them and we can personalize what goes on them. Plus they freeze awesome!
#6 Lasagna Freezer Meals: Lasagna is one of those meals that I hate making fresh for some reason. Making it in a batch that I can freeze is perfect, and when I don’t have time to make a full meal, this works in a pinch. Not to mention its warm, filling, and great for a stormy day or a lazy Sunday.
#7 Crispy Cheddar Chicken: This is a super basic recipe that goes a long way. The cheddar/ritz topping is deliciously tasty and compliments the chicken really well. Plus you can make a few pans and share some with a neighbor if you’d like!
#8 Freezer Friendly Ham and Cheese Pockets: These are a kid friendly favorite! The pockets cook up gooey and cheesy inside and are perfect for a quick and easy dinner. The pickets freeze for 2-3 months and heat up with a zap of the microwave.
#9 Freezer Fajitas: If you’re not in the mood for a casserole, this is the ticket. Stuffing the makings into a freezer bag and tossing them in the deep freeze makes for a great dinner on the fly.
#10 Freezer Stir-Fry: The key to a good stir fry is keeping all the elements separate until you’re ready to cook-that’s why the ones you buy at the store work so well. So, yes, this one is a little more intense in the effort department, but it is worth all the effort.
And there you have it! Ten awesomely delicious and easy freezer meals! With a little bit of time and preparation, you too can be ready with a healthy meal on the fly when you’re buried under end of year essays-oh wait, that’s just me? 😉 Happy cooking!
