As evidenced by my posts, I eat a lot of chicken and meat based protein. It helps balance the carbohydrates and sugars I consume, and they keep me full longer, which I appreciate. There are times, however, when I really don’t want to cook chicken and I don’t want to eat meat. So what’s a girl to do when the red meat is a turn off and she’s overdosed on chicken? Eat vegan, of course!
I think I just heard you roll your eyes. Yes, I said vegan. When it’s done right, it can be every bit as delicious (if not more) and just as protein heavy as meats. I like the flavors and the addition of lots of veggies. The dishes can be wonderfully complicated and full of unique flavors, or they can be a new twist on a simple dish. I’ve rounded up 10 scrumptious and *easy* vegan recipes!
#1: Creamy Vegan One Pot Pasta (Asian Style): This is a super easy dish-as it’s just pasta and some yummy veggies. Plus, you only need one pot. It’s a win-win!
#2: Pesto Spinach Stuffed Tomatoes: This recipe is easy and uses one of my favorite non-meat proteins: Quinoa! These come together quick and only need a few tasty ingredients. I’d recommend a good strainer to wash the quinoa (try this one) and a nice casserole dish and you’re good to go!
#3 Vegan Swedish Meatballs: I love meatballs. I really do. But these are…better. They are light, full of fiber and omega 3s thanks to the flax, and have a great flavor! They come together easy and are best hot out of the skillet.
#4 Quinoa Burrito Bowls with Fajita Veggies: This is another dish that uses quinoa as the protein, and it’s so versatile! The veggies come out flavorful and full of color and texture. This will definitely become a family favorite.
#5 Tomato and White Bean Salad: Perfect for a summer night, this salad has beans for protein and a ton of flavor. It takes ten minutes to throw together and while it has basic seasonings, that makes it easy to customize to your household’s palates.
#6 Vegan Grilled Burritos: These are definitely a must. They get their protein from nuts and black beans, but you could easily swap out the brown rice for quinoa and pack in even more. The sauce is finger-lickin’ good, and I promise you won’t even miss the meat.
#7 Hummus Pizza with Veggies: Putting pizza together with hummus is one of the best things ever. The creamy flavor of a good hummus goes together perfectly with the crunch of the crust and the delicious veggies. This is a must try if you’re in the mood for some yummy veggies!
#8 Vegan Tikka Masala: I love tikka masala. So does my eight-year-old (weird, right?). This is a pretty darn good substitute for the traditional thing. It uses tofu in place of chicken, forgoes the cheese, and soy milk in place of milk. This is a great vegan dish!
#9 Vegan Mac N Cheese: No vegan recipes list is complete without a twist on the comfort food classic. This vegan mac n cheese comes together easily and uses carrots, potatoes, and cashews to create a creamy and flavorful sauce that is almost as good as cheese. It definitely sits better on your stomach (and on your waistline).
#10 One Pot Peanut Sauce Noodles: Peanuts were made to be a sauce like women were made to love chocolate. This uses one pot which is awesome if you hate doing dishes. And the sauce is nutty, creamy, and full of flavor!
