Okay, so if any vegetable gets a bad wrap, its brussel sprouts. I mean, what is not to love about tiny heads of cabbage?
Okay, so the smell can be overwhelming and if they aren’t cooked properly they can be quite…off putting. But, if you use any of these game changing brussel sprout recipes, I guarantee that your mind will be changed and you too will love this awesome veggie!
I mean, look at those darling mini-cabbages! They are full of vitamins A and C as well as a good amount of iron. The key to brussel sprouts is the cooking time. Cook them too long and they become mush. Don’t cook them enough and they are inedible. So, without further ado, here are a few game changing brussel sprout recipes. There are a few things you need to have on hand. One is a good baking sheet and a silpat mat. The other is a good paring knife to trim and cut with. Honey Balsamic Brussel Sprouts
Ingredients:
- 1 1/2 lb. Brussels sprouts
- 3 Tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp pepper
- 2 tsp honey
Process: Preheat your oven to 425F. Put your silpat on your baking sheet. Wash the brussel sprouts, then trip the outer layer (any dry leaves), cut the bottom off, and slice them lengthwise. In a large bowl, toss the sprouts with 2 Tbsp olive oil, salt, and pepper. Lay them on the baking sheet and roast until tender and caramelized, about twenty minutes. Pull them out of the oven and put them back into the bowl and toss with remaining olive oil, balsamic vinegar, and honey and toss until well coated. Season with salt and pepper as desired and serve!
Baked Cheesy Brussel Sprouts
Ingredients:
- 3 Tbsp butter
- 2 small shallots, minced
- 2 lb. Brussels sprouts
- salt
- 1/2 tsp cayenne pepper
- 3/4 c. heavy cream
- 1/2 c. grated sharp white cheddar
- 1/2 c. Gruyère
- 1/2 c. cooked bacon crumbles
Process: Preheat your oven to 375F. Using a large oven safe skillet, melt the butter over medium heat. Add shallots and sprouts and season with salt and cayenne. Stir sprouts occasionally and cook until tender, which should take about ten minutes. Take the sprouts off the heat and slowly add the cream and cheddar, Gruyère, and bacon. Put the skillet in the oven and bake until the cheese is bubbly which should be about 12-15 minutes.
Bacon Brussel Sprouts Skewers
Ingredients:
- 1 lb. Brussels sprouts
- 1 lb. thick-cut bacon
- sea salt
- pepper
Process: Begin by preheating your oven to 400F. Place a metal rack inside a large baking pan. On a skewer, pierce one end of a strip of bacon. Next, pierce a brussel sprout on top, weave the bacon around and skewer. Repeat until the skewer is full. Place on the baking sheet and roast for 20-25 minutes or until the bacon is nice and crispy. Sprinkle with salt and pepper and serve!
