Aunt Jemima's Apple Coffee Cake

Ingredients
  

Coffee Cake

  • ½ c. butter softened
  • ¾ c. sugar
  • ½ c. milk
  • 1 egg
  • 1 tsp. vanilla
  • 1 medium apple cored, peeled, and thinly sliced
  • 2 c. Aunt Jemima Original Pancake Mix

Streusel Topping

  • ½ c. Aunt Jemima Original Pancake Mix
  • c. sugar
  • 2 tsp. ground cinnamon
  • ¼ c. butter

Instructions
 

  • Begin by heating your oven to 350°F and spraying a 9x9 baking pan with cooking spray and set aside. In your mixer, cream the butter for a minute before adding in the sugar and continuing to mix on medium speed. Then add in the milk, egg, and vanilla, allowing them to combine as fully as possible with the butter. Next, mix in the pancake mix until you have a smooth and creamy consistency.
  • Spoon the batter into your prepared baking dish and spread evenly before placing the apple slices on top and giving them a little push so they fall into the batter a little. Next, mix together the pancake mix, sugar, and cinnamon for the streusel in a medium-sized bowl until combined. Cut in the butter with a fork or pastry blender until you have a crumbly consistency. Generously sprinkle this over the top of your batter and apples until the top has been covered.
  • Last, bake for 30-35 minutes or until the middle is done. Allow to cool slightly before serving. Enjoy!
