Start by whisking the lime juice, cilantro, garlic, cumin, olive oil, zest and a little salt together until combined. Then add in the shrimp and give a good toss before covering and allowing to marinate in the fridge for 20 minutes. Don't marinate any longer than 20 minutes or you will risk having rubbery shrimp.
While the shrimp is marinating, make the slaw by combining all the ingredients together and giving a good mix. Season with salt and set aside.
You don't have to make the garlic-lime mayo, but it pairs so nicely with the shrimp. Simply whisk all the ingredients together in a bowl and season with salt.
When the shrimp is done marinating, heat your grill to medium heat. Grill the shrimp about 3 minutes per side, or until they are pink and opaque.
Last, make your tacos by layering the slaw, shrimp, and a little mayo. If you want, garnish with additional cilantro, then serve and enjoy!
