Marry Me Chicken Recipe So Good You’ll Want To Say I Do

In the internet culinary world, Delish is pretty much the cream of the crop. They cultivate some of the best recipes around and are my typical go-to for new recipes. A few years ago they shared a dish they called “Marry Me Chicken” that took the internet by storm. The great part about this chicken recipe is that it has flavor and texture all wrapped up in a delicious sauce.

Chicken Recipe

Ingredients

  • 1 Tbsp. olive oil
  • 6 bone-in, skin-on chicken thighs (about 2 lbs)
  • salt and pepper
  • 2 cloves minced garlic
  • 1 Tbsp. fresh thyme leaves
  • 1 tsp.crushed red pepper flakes
  • 3/4 c. low-sodium chicken broth
  • 1/2 c. heavy cream
  • 1/2 c. chopped sun-dried tomatoes
  • 1/4 c. freshly grated Parmesan cheese
  • basil for serving

Process:

Begin by heating your oven to 375F and heating up an oven-safe skillet (like this one) on medium-high heat. While the skillet is heating up, go ahead and put the olive oil in. Then season the chicken liberally with salt and pepper before searing (skin-side down) for about 5 minutes or until each side is nice and golden. When the chicken is seared on the outside, remove the chicken to a plate and drain about half of the fat left in the skillet.

Next add garlic, thyme, and red pepper to the skillet and return to medium heat. Continue to cook until the garlic is nice and fragrant (about a minute) before adding in the heavy cream, sun-dried tomatoes, Parmesan, and a little more salt. Continue to stir while bringing the mixture to a soft simmer.

When the sauce is mixed and bubbling, add the chicken back to the skillet (skin-side up). Then put the skillet into the oven and bake until the chicken is thoroughly cooked, which should take about 18-20 minutes. When the juices run clear from the chicken, remove from the oven and garnish with the basil to serve. Serve with noodles or rice and some yummy steamed veggies.

This recipe is sure to become a family favorite! If you don’t like sun-dried tomatoes, you can apparently use fresh ones, but I think that it sacrifices quite a lot of flavor. I’d suggest finely chopping or using a sun-dried tomato paste if you can.
